Easy Rustic Apple Pie


This pie is soooo yummy and soooo easy. You can whip this up and have it out of the oven in less than 45 minutes!!


Ingredients

1/4 cup butter
1 cup brown sugar (DO NOT PACK)
2 refrigerated rolled pie crusts, such as Pillsbury
One 21-ounce can apple pie filling
2 tablespoons cinnamon sugar
Directions 
Preheat the oven to 400 degrees F.

Melt the butter in a 9-inch cast-iron skillet; set aside 1 tablespoon of the melted butter for the top crust. To the melted butter, add the brown sugar and melt them together on medium heat, about 2 minutes. Remove from the heat and line the skillet with one of the pie crusts. Pour the apple pie filling over the crust and sprinkle with 1 tablespoon of the cinnamon sugar. Use the second pie crust to cover the filling. Brush the top with the reserved melted butter, then evenly sprinkle the remaining 1 tablespoon cinnamon sugar on top. Cut some slits in the middle of the pie. Bake for 30 minutes. Serve hot, topped with a scoop of Ice Cream

Delicious Caramel Dipping Sauce

Ingredients

3/4 cup brown sugar
3/4 cup sugar
1/2 cup corn syrup
1/3 cup butter
2/3 cup whipping cream
Instructions

1.In a medium saucepan combine sugars, syrup and butter.
2.Cook over medum heat, stirring occasionally, until mixture comes to a full boil, about 5 – 6 minutes.
3.Remove from heat and cool 5 minutes.
4.Stir in whipping cream.
5.Pour into a jar and store in refrigerator. It will thicken when cold.

Rustic Apple Strudel

Rustic Apple Strudel


Ingredients

1 Puff Pastry sheet (1/2 of a package)
1/2 stick margarine, melted
3 T granulated sugar
1 T all-purpose flour
1 tsp ground cinnamon
1/8 tsp allspice
2-3 large granny smith apples, peeled and sliced (I used frozen ones)
Confectioners' sugar (optional - we used ice cream instead :)
Instructions

0.Remove one puff pastry sheet from the package and let sit at room temperature until thawed, about a half hour or so. Place on floured surface and roll out just a bit with floured rolling pin. In medium bowl, place sliced apples and add flour, 3 T sugar, and spices. Stir well to coat apple slices entirely. Spoon apples down the center of your puff pastry sheet. Fold over sides and press seams to seal. Brush with melted butter and sprinkle with a little bit of sugar.
1.Place on baking sheet and bake at 375 for twenty minutes, or until golden

Caramel Apple Jam

Ingredients:
6 cups diced peeled apples (1/8 inch cubes)
1/2 cup water
1/2 teaspoon butter
1 (1.75 ounce) package powdered fruit pectin
3 cups sugar
2 cups packed brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg

Directions:
1. In a large kettle, combine the apples, water and butter. Cook and stir over low heat until apples are soft. Stir in pectin and bring to a rolling boil, stirring constantly. Add the sugars, cinnamon and nutmeg and return to a rolling boil. Boil for 1 minute, stirring constantly.
2. Remove from the heat and skim off any foam. Ladle hot jam into hot sterilized jars, leaving 1/4-in. headspace. Adjust caps. Process for 10 minutes in a boiling-water bath

Pumpkin Butter Spread

1- 15 oz. can pumpkin
1 c. apples, peeled, and grated
1/2 c. packed brown sugar
3/4 tsp. pumpkin pie spice
1 c. apple juice

Combine all ingredients in the crock pot. Mix well and cook on high for 1 1/2 hrs. Reduce heat to low and cook an additional 5-6 hrs. Makes 3 cups!

Caramel Apple Cream Cheese Cookie Bars

3 Tablespoons melted butter

3 Cups Golden Graham Cereal, ground in food processor

1 Roll Pillsbury Sugar Cookie Dough or 2 pkgs Betty Crocker Sugar Cookie Dough Mix prepared and divided into 2 equal parts

8 oz softened cream cheese

1/4 Cup sugar

1 teaspoon vanilla

21 oz can apple pie filling

1.5 oz package Nature Valley Oats N’ Honey Crunchy Granola Bars (2 count), crushed (I use a rolling pin to crush them right in the bag before opening)

9.5 oz Kraft Caramels

1/2 Cup half and half

1. Preheat oven to 350 degrees F. Combine melted butter and ground cereal into a large bowl; press into an 8×8 inch baking dish lined with foil that’s been sprayed with cooking spray. Bake for 10 minutes then remove from oven. Crumble half of the cookie dough over partially baked crust.

2. Place cream cheese, sugar and vanilla into a mixer; beat until smooth. Pour over crumbled cookie dough layer. Bake for 25 minutes then remove from over. Top with 3/4 of the apple pie filling (I chose to just add part, but you can add the whole can if desired). Next top with remaining cookie dough, breaking off into little pieces evenly over top. Sprinkle with crushed granola bars and bake for 30-35 minutes or until toothpick comes clean from center. Let cool completely then cut into squares. Melt caramels and half and half according to package directions. Drizzle over each bar. Refrigerate leftovers.

Old-Fashioned Red Candy Apples

Old-Fashioned Red Candy Apples

8 medium sized apples

8 wooden sticks

3 cups white sugar

1/2 cup light corn syrup

1 cup water

1/4 teaspoon cinnamon (optional)

1/4 teaspoon red food coloring (optional)
Wash and dry the apples. Remove any stems or leaves and insert a wooden stick into the end of each apple. Set apples aside.

Heat and stir sugar, corn syrup and water in a saucepan until sugar has dissolved. Boil until the syrup reaches 300 degrees on a candy thermometer, or until a little syrup dropped into cold water separates into breakable threads.

Remove from heat and stir in cinnamon and food coloring, if using.

Dip one apple completely in the syrup and swirl it around a little with the stick to coat. Hold the apple above the saucepan to drain off excess. Place apple, with the stick facing up, on a well greased pan.

Repeat with remaining apples. If syrup thickens or cools too much, simply reheat briefly before proceeding. Let cool completely before serving.

Easy Fake Apple Dumplings

2 (8 count) cans crescent rolls
3 or 4 tart apples (I used 3 Granny Smith)
1 1/2 cups sugar
1/2 cup butter
1 teaspoon cinnamon
1 (12 oz) can of Mountain Dew or Sprite soda


1 - Spray a 13x9 baking dish or pan
2 - Peel and slice apples into 16 pieces
3 - Roll each apple slice in 1 section of the crescent roll

4 - Place rolled slices in pan in two rows, put extras along side.
5 - Melt butter pour over rolls
6 - Mix together sugar and cinnamon, sprinkle over rolls
7 - Pour can of soda over all
8 - Bake at 350 degrees for 45 minutes.


Would be amazing served with vanilla ice cream. The top bakes crunchy.
Delicious hot, but not bad at room temp either. So perfect for a gathering or social.

Barren River State Park Christmas Waldorf Salad

SALAD
3 large red delicious apples, cored and diced with peel on ( or 6 small)
3 large granny smith apples, cored and diced with peel on ( 6 small)
1 cup shredded coconut
1/2 cup walnuts, chopped
celery, chopped, if desired
1 lb red grapes
1 lb green grapes

DRESSING
1/2 cup frozen orange juice concentrate, thawed
1/2 cup mayonnaise ( NOT Miracle Whip)
1/2 cup sour cream
powdered sugar, to taste, if apples are not very sweet

Directions
In a small bowl, combine the dressing ingredients.
Toss together apples, nuts, coconut, and stir in dressing to coat.
Cover and chill at least 1 hours or until serving.

Spiced Apple Rings

SPICED APPLE RINGS

6 large apples (I use Braeburns)
Peel, core and slice into rings, putting the rings immediately into cold water with lemon juice.

In a large pot: 3 cups water, 1 cup sugar,1 cup cinnamon candies, like Red Hots.
1/3 cup white vinegar
2 - 3 TBSP of whole cloves.

Bring syrup to a boil. Turn down heat and simmer for about 3 minutes, stirring constantly.
Drain apple rings and add to syrup. Let come back to simmer and cook until almost tender, gently stirring occasionally.
Let cool in syrup.

Just a note,to get the apple rings as red as the bought ones,try adding red food coloring

Apple Brown Betty

•1 quart apple sauce
•1/4 cup sugar
•2 cups graham cracker crumbs
•1/2 cup butter
•1 teaspoons cinnamon
•1/2 cup pecans, chopped
Mix apple sauce and 1/4 cup sugar and pour into a baking dish. Melt 1/2 cup butter and mix with 2 cups of graham cracker crumbs, cinnamon and nuts. Spread over the top of the apple sauce and bake at 400 degrees until brown (about 10 minutes).

Caramel Apple Salad

1 small pkg butterscotch instant pudding
1 cup mini marshmallows
1 8oz can crushed pineapple
1 cup dry roasted peanuts~ can chop a bit if you want
1 1/2 cup chopped apples, leave peeling on~ Granny Smith's are good
1 8 oz container Cool Whip
2 cups Twix candy bar pieces
Combine pudding, marshmallows,pineapple and cool whip. Mix well. Add peanuts, apples and candy bar. mix. Chill.

Apple Walnut Flax Seed Bread

Apple Walnut Flax Seed Bread

makes one 9x5-inch loaf

1 cup all-purpose flour
3/4 cup whole wheat flour
3/4 cup brown sugar, packed
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
generous pinch freshly ground nutmeg
2/3 cup buttermilk
1/3 cup unsalted butter, melted and slightly cooled
1 teaspoon vanilla extract
2 large eggs, lightly beaten
1 cup grated apples
1/2 cup coarsely chopped apples
1 tablespoon flax seeds
3/4 cup coarsely chopped walnuts, divided
cinnamon and sugar for sprinkling

Preheat oven to 350 degrees F.

Grease and flour a 9x5x3-inch loaf pan and set aside.

In a medium bowl, whisk together flours, sugar, salt, baking powder, baking soda, cinnamon and nutmeg.

In a small bowl, whisk together buttermilk, eggs, melted butter and vanilla extract.

Mix the wet ingredients into the dry ingredients. Add the grated apples, chopped apples flax seeds and half of the chopped walnuts. Fold to incorporate thoroughly.

Spoon batter into prepared pan and top with granulated sugar, cinnamon and the rest of the walnuts.

Bake for 40 to 50 minutes or until a skewer inserted in the center of the loaf comes out clean.

Let cool in the pan for 15 minutes then invert onto a cooling rack to cool before wrapping.

Serve slightly toasted with butter. Yumtastic.

Spiced Apple Rings

4 lbs. firm, tart apples - peeled, cored, sliced
2 qt. water
2 Tbls. lemon juice
4 cups granulated sugar
2 cups water
1/3 cup red hot cinnamon candies
1/3 cup distilled white vinegar
1 Tbls. whole cloves


-Soak apple slices in water and lemon juice.
-Combine sugar, water, cinnamon candy, vinegar, and cloves in a 6 quart saucepan.
-Bring to a boil, then simmer 3 minutes, stirring constantly.
-Drain apples, add to hot syrup, and cook 5 minutes.
-Serve hot OR follow instructions for canning below.

Canning Instructions:

-Place boiling water bath canner (or large pot), filled half full with water, on the stove burner and begin to heat. Make sure canner has a removable rack that will fit inside the canner. The canner should be large enough to allow the water to boil 1"-2" over the jars when they are placed on the rack in the canner.
-Place an extra kettle of water on the stove burner in case extra boiling water is needed to cover the jars in the canner.
-Wash jars and bands in hot soapy water; rinse in hot water. Jars should be boiled in hot water for at least 10 minutes.
-Fill jars with hot apples and syrup, leaving 1/2" head space at the top of the jar. Run a non-metal knife or spatula along the inside of the jar to remove air bubbles. Wipe off the top of the jar rim with a clean cloth.
-Place hot sealing lid on packed jar next to glass. Screw band on jar until just tight.
-Place jars in canning rack, then place rack in canner while water is boiling. Ensure jars are far enough apart to allow for circulation of water around jars. Water should be 1"-2" over the tops of the jars when boiling.
-Begin timing for processing as soon as the water returns to a rolling boil. Boil, covered, for 20 minutes.
-Remove hot jars from water and place on a towel or rack to cool. Keep jars out of drafts. Do not turn jars upside down. When jars have cooled, ensure they have sealed properly.
-Decorate lids by wrapping a ribbon around the rim.

Sweet & Sour Apple Dessert

Bottom Layer
2 cups graham wafer crumbs
1/2 cup melted butter
Mix together and press in 9"x 9" dish

Filling:
Mix together:
1 tub sour cream (I used low fat)
1 can of sweetened condensed milk
3 Tbsp lemon juice
Pour the above mixture over bottom layer.

Top with 1 can apple pie filling and sprinkle with cinnamon

Bake at 350 degrees for 15 minutes. Refrigerate for several hours.

Easier Than Apple Pie

1 refrigerated pie crust
3/4 cup sugar
2 Tbs. cornstarch
1 Tbs. McCormick ground cinnamon
4 cups peeled, thinly sliced apples (4 medium apples)
1 egg white, lightly beaten
1 tsp. sugar for glaze

1. Prepare crust as directed on package. Place on foil-lined baking
sheet. If necessary, press out any folds.
2. Mix 3/4 cup sugar, cornstarch and cinnamon. Toss with apples.
Spoon into center of crust, spreading to within 2 inches of edges.
Fold 2-inch edges of crust over apples, pleating crust as needed.
Brush crust with egg white; sprinkle with 1 tsp. sugar.
3. Bake at 425 for 20 minutes or until apples are tender. Cool
slightly before serving.

Harvest Apple Bread

1 cups white sugar
1 cup br. sugar
2/3 cup shortening
2 eggs
3 cups flour
1 tsp. cinnamon
1/2 tsp. cloves
2 tsp. baking soda
1/2 tsp. nutmeg
1/2 tsp. salt
1 cup raisins
1 cup chopped walnuts
1 cup cold coffee
2 cups chopped apples

Grease and flour loaf pan or muffin tins
Cream together sugars, shortening and eggs.
Sift together dry ingredients. add raisins and walnuts.
Add coffee to creamed mixture alternately with dry ingredients.
Fold in apples. Bake in 350 oven for 50 min . for loaf or in 375 oven for 20-25 min. for muffins.

Raw Apple Cake With Hot Sauce

1 1/2 cups all purpose flour
1 1/2 cups granulated sugar
1 1/2 teaspoons baking soda
3/4 cup chopped nuts
3 cups diced baking apples
1 1/2 cups granulated sugar
2 eggs well beaten
Combine flour, 1 1/2 cups granulated sugar, baking soda, and nuts, set aside. Combine apples, 1 1/2 cups sugar, and eggs, mixing thoroughly. combine both mixtures. Pour batter into a greased and floured 13 x 9 x 2 inch baking pan. Pour hot sauce over cake before baking.

Hot Sauce
1/2 cups firmly packed brown sugar
1/2 cup granulated sugar
2 Tablespoons all purpose flour
1 cup water
1/4 cup butter or margarine
1 teaspoon vanilla
Combine sugars, flour and water, heat in saucepan, stirring, until sauce turns clear. Add butter and vanilla. Pour sauce over cake batter before baking. Bake at 350 degrees for 35 to 45 minutes or until done. Yield 12 to 16 servings.

Butterscotch Apple Dip

Ingredients
1 (14-ounce) can EAGLE BRAND® Sweetened Condensed Milk (NOT evaporated milk)
1 cup butterscotch-flavored chips
1/4 teaspoon salt
2 teaspoons white vinegar
1/4 to 1/2 teaspoon ground cinnamon
Apple wedges


Instructions
In heavy saucepan, over low heat, combine EAGLE BRAND®, butterscotch chips and salt. Cook and stir until melted.
Remove from heat; stir in vinegar and cinnamon. Serve warm with apples. Store leftovers covered in refrigerator.
Notes: To Reheat: In small heavy saucepan, combine desired amount of sauce with small amount of water. Over low heat, stir constantly until heated through. Tip: Can be served warm over ice cream. Can be made several weeks ahead. Store tightly covered in refrigerator. MICROWAVE METHOD: In 1-quart glass measure, combine EAGLE BRAND®, butterscotch chips and salt. Microwave on HIGH (100% power) 3 or 3 ½ minutes, stirring after 2 minutes. Stir in vinegar and cinnamon.

Apple Dapple Cake

I got this from southernplate.com she has some wonderful recipes... you pour a brown sugar sauce over this after you bake the cake...YUMMM. I love brown sugar!!

3 c. all purpose flour
1 t. salt
1. t. soda
1. cup pecans, chopped
1 c. wesson oil
2 c. sugar
3 eggs
2 t. vanilla
3 cups raw apples, peeled and chopped fine

Mix oil, sugar, eggs and vanilla. Sift together flour, salt, soda. Add to first mixture. Fold in pecans and apples. Bake in tube pan at 350 for 1 hour.

Sauce
1 cup packed brown sugar
1/4 cup milk
3/4 cup margarine(1 1/2 sticks)

Mix and cook 3 minutes after it begins to gently boil, stirring constantly. Pour over hot cake while cake is still in pan. Let cake cool completely before removing.
