Sun-Dried Tomato & Basil Cream Cheese Spread

Sun-Dried Tomato & Basil Cream Cheese Spread

8 oz. 1/3-less-fat (Neufchatel) cream cheese, softened
6 tbsp chopped sun-dried tomatoes
2 tbsp thinly sliced fresh basil
Pinch of salt

In a medium bowl, using a rubber spatula or wooden spoon, press and stir the cream cheese until smooth. Stir in sun-dried tomatoes, basil and salt. Serve with toasted baguette slices, bagels, or crackers.

Makes about 1 1/2 cups spread.

Cream Cheese Olive Spread

***you might want to make a double batch of this***
3 oz cream cheese
1/3 cup sliced green olive with pimentos
2 Tablespoons cream
1/4 cup finely diced celery
drop or two Tabasco
pinch of salt
Allow cream cheese to reach room temperature. Beat (with mixer) until fluffy. Add the cream and seasonings. Blend. Mix in olives and celery. Allow time to soften before eating, serve with crackers. Keeps at least 2 weeks in refrigerator.

Braunschweiger Cracker Spread

1 lb. package Braunschweiger, softened
1 (8 oz.) cream cheese, softened
1 Tbsp. horseradish sauce (I used plain horseradish)
1 small onion, minced
1 Tbsp. Worcestershire sauce
Dash of garlic powder

Combine all ingredients well. Refrigerate for at least 2 hours before serving. Spread on Ritz crackers.

Strawberry Magic Cake

1 10oz pkg. miniture marshmallows
1 box yellow cake mix prepared as directed on package
1 3oz box strawberry jello
1 16oz. box frozen sliced strawberries, slightly thawed, but do not drain
2/3 cup cold water

Spread marshmallows evenly over the bottom of a greased 10x13 baking pan. Spread prepared cake batter evenly over marshmallows. Sprinkle dry jello powder evenly over the cake batter. Spool slightly thawed strawberries here and there over jello powder and then drizzle evenly with 2/3 cup water, but do not stir. Slip cake carefully onto
center rack of a 350o oven, and bake 55-60 minutes or until top is golden brown. Let cool in pan at least 30 minutes before cutting.

Honey Butter

3/4 cup honey
3/4 cup powdered sugar
3/4 cup butter or margarine, softened
1 teaspoon cinnamon

Blend all ingredients together and store in the refrigerator.
