Grandma Solomon's Carrot Cake

3 eggs slightly beaten
3 cups sugar
1 lg can crushed pineapple
3 teasp cinnamon
1 1/2 teasp salt
2 cups grated carrots
2 cups walnuts
2 cups oil
4 cups flour

Cream eggs and sugar together, add pineapple, cinnamon, soda, salt and mix together. Add carrots and nuts and mix. Add oil and mix and then add flour. Put into 3 greased cake pans. Bake at 300 degrees for 1 1/2 hours or until done, check with a toothpick

Icing
1 1/2 cups butter
12 oz cream cheese
cream together

Add enough powdered sugar to make the consistence wanted .


Grandma Solomon's Gingersnap

3/4 cups shortening
1 cup dark brown sugar (firmly packed)
1 Egg, unbeaten
1/4 cup molasses
2 cups sifted flour
1/4 teasp salt
2 teasp baking soda
2-1/2 teasp ground ginger
1 teasp cinnamon
1 teasp cloves

Combine shortening, sugar,and egg and beat until fluffy, add molasses and beat well....
Sift dry ingredients together and add to wet mixture and mix well.
Shape into 1 inch balls roll in sugar and place 2 inches apart on cookie sheet.
Bake at 350 for 12 to 15 minutes
Makes about 4 doz cookies

Grandma Solomon's Popcorn Balls

This is another recipe I remember Grandma making....what a treat.

5 quarts of popped popcorn (NOT MICROWAVE)
2 cups sugar
1 1/2 cups water
1/2 teasp salt
1/2 cup light corn syrup
1 teasp white vinegar
1 teasp vanilla

Keep popcorn hot and crisp in a slow oven (300 to 325 degrees)
Butter sides of a saucepan, combine sugar, water, salt, corn syrup, and vinegar. Cook to a hard ball stage (250 degrees) Stir in vanilla, slowly pour over hot popcorn, stirring just until mixed through. butter hands lightly, shape popcorn into 4 inch balls.
makes 9 balls

Grandma Solomon's Caramel Corn

I remember Grandma making this when I was a kid and how wonderful it tasted....I was pleasantly surprised when I opened up an old button box I received after she passed away and there was this recipe along with her peanut brittle and popcorn ball recipes...you can also find those in this blog.


4 quarts of fresh popped popcorn...NOT MICROWAVE POPCORN!!!
1/2 cup margarine
1 cup brown sugar (packed)
1/2 cup light corn syrup
1/3 teasp salt
1/2 teasp vanilla
1/2 teasp baking soda

Put popped popcorn in a large roasting pan. In a heavy saucepan, mix sugar, butter, corn syrup, add salt. Stir over medium heat until it comes to a boil. Continue to boil for 5 minutes without stirring. remove from heat and add vanilla and baking soda.
Soda will make it expand. pour over popcorn and stir to coat well.
bake at 250 degrees for 1 hour stirring several times to evenly coat.
store in an airtight container or Ziploc bag.

Grandma Solomon's Peanut Brittle

This is by far, the best peanut brittle I have ever tasted!!! So light and crunchy

I can remember my Grandma Solomon making this when I was a little girl..along with her caramel corn....look for that recipe to come soon.



DO NOT DOUBLE THIS RECIPE!

1 1/2 cups sugar

1/2 cup light corn syrup

1/2 cup water

pinch of salt

1 1/2 cups peanuts (I use dry roasted)

1 Tblsp. butter

2 teasp baking soda



Mix sugar, salt, syrup and water in a heavy saucepan. Put on high heat and stir until sugar dissolves. Cook until syrup reaches the hard ball stage (250 - 260 degrees). While this is cooking, butter the bottoms of 4 pie tins (I use aluminum).

When syrup reaches 250 - 260 degrees add peanuts and bring ntemp. back up to 250c - 260 degrees. Remove from heat and stir in butter and soda. Pour into pie tins. DO NOT spread. Allow to cool, remove from pie tins and put into plastic bags tied with ribbion. Makes great Christmas gifts
