Lemon Bars

CRUST:
1-1/2 sticks (3/4 cup) butter or margarine, room temp.
1-1/2 cups flour
1/2 cup powdered sugar

TOPPING:
4 eggs
2 cups sugar
1/4 cup flour
1 tsp. baking powder
2 tsp. freshly grated lemon peel
1/3 cup lemon juice

For garnish: powdered sugar

1. Heat oven to 350. Grease a 13x9 baking pan.
2. In food processor or with electric mixer, process or beat thebutter, flour and powdered sugar until mixture holds together andforms a dough. Press over bottom of prepared pan.
3. Bake 15 minutes until light golden and firm when touched.
4. Beat all Topping ingredients until blended. Pour over base.
5. Bake 25 to 30 minutes until golden brown and set.
6. Cool in pan on wire rack.
Dust with powdered sugar before cutting into bars. Makes 24.

Peanut Butter Roll Up Candy

1 lb. confectioners sugar
1 stick butter
2 tbsp. sweetened condensed milk
1 tsp. vanilla flavoring
Peanut butter

Mix all ingredients (except peanut butter) together into a well combined mixture and roll out on wax paper, using some confectioners sugar to keep from sticking. Spread peanut butter dough and roll up in jelly roll fashion. Let sit 3 hours in refrigerator, then cut into 1/4 inch slices.

WW Cauliflower Soup

Cauliflower Soup

6 cups water
4 cups cauliflower -- chopped
2 cups sliced carrots
1/2 cup chopped onions
2 tablespoons chopped parsley
4 chicken bouillon cube
salt -- to taste
white pepper -- to taste

1. In a 5-quart (or 5-L) saucepan, add all ingredients except salt and white pepper. Cover and simmer until vegetables are tender (about 20 minutes).
2. Strain off and reserve most of the liquid. Place vegetables in a food processor and puree.
3. Add pureed vegetables and reserved liquid back into the pot, add salt and white pepper, and reheat.

Pepperoni Bread

It’s a loaf of pizza!

1 C + 2 Tblsp water
2 Tblsp sugar
3 C bread flour
1-1/2 teasp garlic salt
2/3 C pepperoni slices chopped
1-1/2 Tblsp Italian seasoning
1/3 C mozzarella cheese
1-3/4 teasp yeast

Add to breadmaker in order listed.
When placing the pepperoni in, mix into the flour to coat the pepperoni.
Use a basic white cycle and a dark crust for best results.
Do not use timed cycle for this bread.
When done, remove and cool on a rack. Heat some pizza sauce or tomato sauce mixed with garlic salt and Italian seasoning and use for dunking to serve as an appetizer. It’s delicious toasted. Best if served warm (microwave is fine).

Beer Pizza Crust

It's said that this is a dynamite pizza dough recipe!

Makes 2 12-inch thin pizzas or 1 thicker 20x8 inch pizza.

Preheat oven to 400’. it's a tender, thin crust has an extra tang from the beer.

1 cup beer
1tsp salt
2 tsp granulated sugar
3 cups all-purpose or bread flour
2 tsp dried basil
1 ½ tsp bread machine yeast

Measure ingredients into baking pan in the order recommended by the manufacturer. Insert pan into the oven chamber. Select Dough Cycle.
Remove dough to a lightly floured board; cover with a large bowl and let rest for 10 to 15 minutes. Roll out dough or press into the pan.
To partially bake the pizza crust, bake in preheated oven for 10 – 12 minutes. Spread with your choice of toppings, and bake again for another few minutes or until the top is bubbling and the cheeses are a golden color.

Note:
Top it with basil pesto, ground beef, sweet onion, mushrooms, tomatoes and fresh basil, dot with goat cheese and then finish with pizza cheeses. Yum!

Amaretto Mocha Coffee Mix

1 cup skim milk powder
2/3 cup Coffee-Mate
1/2 cup brown sugar
1/2 cup sifted cocoa
1/3 cup Instant coffee
2 tsp Almond extract

Directions:
Mix all ingredients together and store in an airtight container or jar with lid.
Use 1/3 cup per 1 cup hot boiling water, stir until dissolved.

WW Coconut Cream Pie

Serves 1 2.5 points

Recipe Ingredients
1 Jell-O Sugar Free Vanilla Pudding Snack
½ sheet (2 crackers) low-fat honey graham crackers, crushed
¼ tsp coconut extract
1 tbsp sweetened coconut flakes
2 tbsp Fat Free Reddi-Whip

Directions
Spoon pudding into a small bowl. Mix in coconut extract. Top pudding with crushed graham crackers and coconut flakes. Finish off this creamy coconut cloud with whipped topping. Mmmmm.

WW Potato soup

3 points for 2 cups 

8 servings

 ½ onion chopped  

14 oz bag frozen shredded hash browns the unflavored kind 

1 can chicken broth 

2 ½ cans water 

2 chicken bouillon cubes 

1 package Oscar Meyer real bacon bits 3 oz 

1 can cooked carrots drained 

pepper to taste 

1 pkg old fashion country gravy mix (McCormick is the best Gravy mix for this recipe. ) 

1 cup cold water

 sauté the onion onions, just spray pan with olive oil or something like that. get soft a little. Pour in the chicken broth water bouillon cubes and bag of potatoes and real bacon bits. Bring to boil when boiling add the gravy mix you added with1 cup cold water too. Boil for a few more minutes soup will start to thicken. Dump the carrots in last and add pepper to taste. Turn off cover and let set for a few hours if it is too thick you can add more water.
